Does it ever happen to you that you come back home from a long busy day tired and not wanting to cook elaborate meal? I land up in such situations at least once in 2 weeks.
This week one of such days I came home only to find some left over Shahi Paneer and Naan in the fridge. The Shahi Paneer was in a sad state of affairs with most of the Paneer over leaving behind some gravy. I couldn’t eat that gravy just as it was. There was one and half Naan left which has lost its freshness and had become a little chewy.
It was one of those “Urgghh” moments.
I decided to jazz it up and make Shahi Paneer Kottu Paratha.
Little background about Kottu Paratha
Kottu Paratha is a dish from the state of Kerala in India. Every state of India has a similar dish made with leftover bread. In the state of Maharashtra where I belong to it is called Phodanichi Poli.
This is what I did for Shahi Paneer Kottu Paratha-
I chopped some red onions. Not too thin not too thick.
Cut the Naan in little bite size pieces.
Heat the oil in the pan and added the chopped onions along with some roasted cumin seeds.
Once the onions cooked a little bit I added the leftover gravy, added some extra Paneer cubes that I had in my fridge already.
Once the gravy heated up a little I added the Naan pieces and sauté for 2-3 minutes on high. Added some salt and fresh black pepper along with some roasted and crushed fennel seeds. If you wish you can add some garam masala or red chilly powder.
I topped it off with some freshly chopped coriander leaves and viola! You have a one pot dish ready!
Tastes great with some yogurt on the side.
You can add boiled potatoes or peas if you like instead of the Paneer pieces. You can pretty much follow the same recipe for any curry/gravy leftover.
