Whiskey Dark Chocolate Brownies with Baked Cheese Frosting

DSCF3483

Chocolate is one thing I CANNOT live without ( well among other things like ice cream, Dahi wada and Pani Puri). I had to celebrate India’s victory over Pakistan in ICC World Cup.

(Conversation with myself)

“Hummm Chocolate Brownies!!”

“meh!”

“Chocolate Brownies which are frosted and baked rather than baked and frosted”

“Interesting…Good going…Keep thinking”

“Don’t wait!! Go for it!!”

This is what you need

1/2 Cup All Purpose Flour

1/2 Cup Dark Chocolate Cocoa Powder

8 Tablespoons Room temperature Butter.

2 Eggs at room temperature.

1 Cup Brown Sugar

1/2 Cup Irish Cream

2 Teaspoons Vanilla Extract.

For Frosting

1 Egg at Room Temperature.

1/4 cup All Purpose Flour

1/8 Teaspoons of Granulated Sugar.

8 Oz Cream Cheese at Room Temperature.

1/4 cup Irish Cream.

This is what we need to do –

Sift the All Purpose Flour and Cocoa Powder together to remove any lumps.

Add Butter, eggs, Sugar, Vanilla Extract, Irish Cream and fold. You should not be using the any electric blender or hand mixer. That action adds air to the mixture and that’s not what we want if we are going to make chewy brownies.

Beat the egg, sugar, Cream Cheese, flour and Irish Cream and set aside.

In an Ovenproof pan lined with a parchment paper pour and spread abut 3/4 of the brownie batter. Spread evenly to every corner.

Spread the Cheese batter on that evenly.

Scoop the remaining brownie batter over the cheese batter very thinly. Take a toothpick and start making swirls over the batter.

The idea is to get marble like pattern without over-mixing the 2 batters.

Bake it in pre-heated oven for 45 mins at 350 Degrees Fahrenheit.

These brownies are going to be moist and creamy and not like a chocolate cake as there is no baking powder or baking soda.

Enjoy them warm with a scoop of Vanilla or Coffee Ice Cream.
