Quick Weekday Meal – Pav Bhaji flavor Egg Salad Sandwich

DSC_0007-003There are some days where you either don’t have any energy left to cook or you have hardly any grocery to put together a meal. Egg Salad Sandwich is my go-to recipe for such days. It requires very minimal ingredients which are alway at home.

Before I tell more about the actual recipe- Here’s a trick to perfectly boil the eggs. I know you must be thinking it is such an easy thing but there is very fine (gray) line between a perfectly boiled egg and an over boiled egg.

How to boil eggs perfectly – 

To boil the eggs perfectly  you need to keep them at room temperature. Key is to do this fast – keep them in room temperature water for 4-5 minutes. Start the flame let the water start boiling. Once the water starts boiling start your timer for 5 minutes. Let the water boil on high setting for 5 minutes. After 5 minutes switch off the flame and put the lid on and let them cook in the water for 10 minutes. Take them out of the water and let them cool completely. I promise you will have perfectly boiled eggs without any sulphur rings. Here they are!

How to make Egg Salad Sandwich

To make the egg salad dice the boiled eggs once they cool off. I used 5. Add 1 tablespoon of Mayonnaise, 1 teaspoons Dijon Mustard, 1 Teaspoon of thick yogurt,1 pinch of Salt, 1 teaspoon of freshly ground Pepper to the diced eggs and mix gently.

Add 1/2 teaspoon of Curry powder and 1/2 teaspoons of Pav-Bhaji Masala to the eggs. Curry Powder and Pav-Bhaji Masala are my secret ingredients for this egg salad. Once you make the egg salad you can eat it just like this or make a sandwich with some greens (Spinach, Lettuce or Celery leaves) and toasted bread. You can enjoy this with a dash of hot sauce if you like.

You can make this Salad and it stays well in the fridge for a couple of days.
