The Simple and Humble Cream Brulee

This Christmas my Santa gave me what I wanted. A blowtorch for my love for Cream Brulee.

This is very simple pick-me-up dessert.

We at our household love something sweet everyday after dinner. Somedays it is just a small bite of dark chocolate. Somedays I do like to make something fancy to end the day on a perfect note. Sundays are the best days for desserts. I normally have the time and patience for making the dessert and it also helps with my Monday blues (a little).

Here’s a great recipe for your Sunday night or even a speciate date night dessert.

You will need- 

  • 1 large egg
  • 2 egg yolks
  • 1 and half cup of heavy whipping cream
  • 1 teaspoon of pure vanilla extract
  • Quarter cup of Sugar + 2 teaspoons of sugar.

The recipe is really really simple.

Start by heating the whipping cream in a heavy bottom pan. All you have to do is to warm that cream a little bit. We do not want to even boil it. It should be warm to the touch.

In a big bowl whisk egg, egg yolks, sugar and vanilla. You do not have to beat it hard. Whisk just enough to mix all well.

In the same bowl add the warm whipping cream in a flow whisking continuously. Milk temperature is really crucial here. If the milk is too hot you will end up with scrabbled eggs and that’s no fun at all.

Once you mix everything together you will need to strain it through a thin mesh. This is to make sure you don’t have any unmixed egg whites in the mixture. The unmixed egg whites will not bring a smooth texture to the custard.

Place the oven safe ramekins in a big baking tray. Pour the strained custard mixture in each one of them till the brim. We do not have any flour or baking powder/soda in this mixture so this is not going to raise. In fact it is going to shrink after we bake it.

Pour some water in the baking tray. This makes sure that the Cream Brûlée is baked evenly from all edges without getting burnt.

Bake in a preheated oven at 300F for 40 minutes. Cool in the refrigerator for at least 30-35 minutes after baking.

Just before serving sprinkle 1 teaspoon of sugar evenly on the surface. With your blowtorch caramelize the sugar and serve!

This measurement makes just enough for 2 people.

If you do not have a blowtorch you can still enjoy this dessert. You have to use the broiler function of your over but only for couple minutes. Do not even blink ( I am NOT kidding!!!). It burns pretty fast!

Variations to the above dessert for different taste

  • Add a little instant coffee in the custard and then you have a nice coffee cream brulee
  • We always like to add a little Irish cream for a little spirited dessert
  • Add mango puree and you have a mango cream brulee. In that case you need to cut down the sugar.
  • Add little melted chocolate and you have chocolate cream brulee.
