Vegetarian Lettuce Wraps

DSC_0146I am a big fan of lettuce wraps. They are easy to eat, healthy- high on protein and less in Carbs. I love P.F.Changs and I cannot have enough of their lettuce wraps. This is my take on their famous lettuce wraps. The verdict from my family – “It’s perfect!!”. I hope you like it too.

Ingredients

1 Cup Shitake Mushrooms – Diced finely.

1 Cup Button Mushrooms – Diced Finely

1 and 1/2 Cup Water Chestnuts – Diced Finely

1/2 Cup Extra firm Tofu – Diced Finely.

1/2 Cup Onions – Diced Finely

1/2 Cup Spring Onions – Chopped

2 Tablespoons Garlic – Diced Finely

1 Tablespoons Ginger – Diced Finely.

Butter or Iceberg Lettuce.

Some Fresh Basil leaves – Thinly chopped.

Spices and Sauces

Yellow or Dijon Mustard

Sriracha or Chilly Garlic Sauce

Ketchup

Brown Sugar

Soy Sauce

Hoisin Sauce

Sesame Oil

Rice Wine Vinegar

Finely chopped Ginger.

To Make the sauce

To make the sauce I start with first mixing about 1 tablespoons of Sesame Oil, 1 tablespoon of Rice Wine Vinegar, 1/2 tablespoons of Soy sauce, 1/2 tablespoons of Hoisin Sauce, 1 teaspoons of Ketchup, 1 teaspoons of brown sugar, 1/2 tablespoons of chilly garlic sauce, 1/2 teaspoons of mustard and 1 teaspoons of finely chopped garlic. I adjust the ingredients to my taste. It has to taste little tangy and little spicy with a nice kick of mustard.

I always find myself adjusting soy sauce, Sriracha and mustard. :).

You can save this sauce and use it on the breads or veggies for a quick dip.

For the Filling

In a wok heat about 1 tablespoons of sesame oil. Once the oil is hot add finely chopped garlic. Once the garlic starts turning brown on the sides add mushrooms, Water Chestnuts and onions. Cook on high heat. Add Ginger and continue to cook for about 2-3 more minutes. Add half of the sauce mentioned above and cook on high heat. The sugar in the sauce should help caramelize the mushrooms. Add Tofu and Spring Onions and cook for another couple of minutes. Make sure you take away the moisture as much as possible. Adjust the spice according to your taste.

To serve

Take a leaf of chilled iceberg lettuce. If you don’t have iceberg lettuce you can use butter lettuce or simply romaine lettuce whichever is easily available. Top it up with the filling, garnish it with fresh basil. Add some extra drops of the sauce and enjoy the bite.
